Black Eyed Pea Salsa (Poor Mans Caviar)



1 cup vegetable oil

½ cup apple cider vinegar

½ cup sugar

¾ tsp. salt

¾ tsp. pepper

Wisk the marinade ingredients together in a sauce pan and bring to a boil; set aside to cool to room temperature

In large bowl mix

1 can black eyed peas drained

1 can black beans drained

1 pkg frozen shoe peg corn (white corn)

1 cup chopped celery

1 cup chopped green bell pepper

1 cup chopped sweet yellow onion or red onion

Mix with cooled marinade let chill at least 2 hours or overnight.

Serve with Tostitos bowl tortilla chips
